This position is responsible for 24/7 management of retail food operations on Marquam Hill campus at Oregon Health & Science University and one location at CHH2. The retail food services program consists of 12 retail venues (cafes, espresso bars, healthy food store and gift shop) generating 3.2 million transactions and serves the dining and nutritional needs of faculty, staff, and guests across all OHSU missions. The position oversees an annual operating budget of $15 million, which generates $15 million in annual revenue. The position oversees a management team of five supervisors and a staff of 130 FTE, including cooks, baristas, cashiers, and food service workers.
This position is responsible for development and implementation of the annual operating plan for retail operations that supports the Food & Nutrition Services Strategic Plan. This position is responsible for establishing and maintaining systems and procedures, developing and monitoring the budget for retail food service operations, and for ensuring that food safety and outstanding guest experiences are maintained in all locations.
Exposure to a variety of food products, restaurant grade chemicals, heat, cold and loud noise. Exposure to a large amount of people on a daily basis. Must be able to work long hours as needed and be available on an on-call basis.
Working knowledge of kitchen equipment including but not limited to a grill, steamer, tilting skillet, mixer and dish machine. Ability to lift and carry up to 50lbs. Ability to stand and walk continuously for long periods of time. Ability to perform a variety of movements such as bending, pulling, twisting and reaching. Ability to use and operate cash register and POS systems.
